Brew day went well, except trying to chill down at the end. Will use an ice bath next time.

Added 2.60 gms of CaCl for water adjustments.

Sparge 1 - 22L @ 1.052
Sparge 2 - 13.5L @ 1.018

Final 31L @ 1.047

Fri October 30, 2009 11:49	Rating: 25 Age at tasting: 6 months	Had it again around at Steve's tonight, and think it might actually be DMS in the beer, with a small bit of astringency that is causing the problems.
Tue May 26, 2009 22:10	Rating: 20 Age at tasting: 27 days	Still really crap, and possibly getting worse. Think I will leave to sit for a couple of months in the keg. The bottled conditioned one was much much better
Sun May 03, 2009 19:49	Rating: 40 Age at tasting: 4 days	The kegged beer still tastes really awful and is suffering greatly from the acetaldehyde still. Added some fresh 1098 to try and clean up the acetaldeyde. But the bottle condition sample was really promising. Nice malt sweetness with a dry finish, and great yeast profile. Still a little of the acetaldehyde but much better.
Tue April 28, 2009 18:52	Rating: 30 Age at tasting: 1 day	Still a lot of green apples in it, but much better than it was looking at bottling day. Has a lot of potential, and will throw in some backup yeast in the keg to try and help clean it up a bit faster.

Sat April 25, 2009 11:25	Gravity reading[SG]: 1.013, Temp[C (F)]: 23.00 (73.40), Atten: 72.29%, ABV: 4.55%	Kegged today. Lets see what could possibly be worse than: 5 fruit flys floating around in the ferementer (some still alive) and complete and utterly dominated by acetaldeyde :( Going to take while before this one is going to be drinkable. that is if its not already infected.

Tue April 14, 2009 21:38	Gravity reading[SG]: 1.013, Temp[C (F)]: 19.00 (66.20), Atten: 71.99%, ABV: 4.54%	Tasting pretty ordinary, but to be expected at this stage.
Sun April 12, 2009 20:04	Gravity reading[SG]: 1.019, Temp[C (F)]: 19.00 (66.20), Atten: 58.71%, ABV: 3.70%	Tasted a tad on the fruity side. Was pitched at 23C and did not get down till under 20C for about 24hrs. Also some honey coming through, which is not a good sign. Really is too early to tell at this stage.
