Gravity sample showed a strong bitterness coming through now. It is not overly harsh and is supported by the malt profile. The chocolatiness seems to have dropped off a bit.
Colour is a light brownish colour and not as reddish as I wanted but still looks like a good colour.
Airlock bubbling has slowed down to maybe 1 every 30-60 seconds. might give it a shake to rouse the yeast and try to get it to finish off.
Airlock started bubbling yesterday afternoon. Now going quite frequently.
Gravity sample is a nice reddish brown colour. Taste is complex, there is a strong malt backbone with a hint of chocolate oddly enough. The hop profile is subdued but adds an extra layer of complexity over the maltiness.
Added Wort to clean fermenter from the cube. Colour was quite dark with a nice redish hue to it. It may lighten up a bit after fermentation but otherwise it may be a bit dark for style.
Cube contents was just under 17L. Measured gravity was 1048. I added water to 23 L which dropped gravity to 1036.
Wort had a good strong bitterness in there as well as a sweet malty backbone. The Galaxy was not as prominent as I thought it may be but then again neither was the Amarillo. I will probably need to use a hop tea to bulk up the hop profile a bit. Maybe Brendo can help me as they are his speciality :)
I pitched 1 vial of Whitelabs California Ale yeast into the wort after warming it up a bit from the fridge.
